Abstract
Sustav upravljanja kvalitetom je važan za razvoj i održavanje konkurentnosti organizacija, što međunarodne norme predočavaju načine osiguranja uz niže troškove. Problem pri uvođenju sustava kvalitete su ograničeni resursi, bilo da je riječ o financijskim ili ljudskim resursima. Kvaliteta u turizmu i ugostiteljstvu uključuje dosljedno isporučivanje proizvoda i usluga gostiju u skladu s očekivanim standardima. Pružanje kvalitetne usluge jedan je od glavnih izazova s kojima će se ugostitelji susresti u sljedećim godinama, jer je to osnovni uvjet za uspjeh na rastućim, oštro konkurentnim, globalnim tržištima ugostiteljstva. Cilj rada je prikazati teorijske odrednice kvalitete s naglaskom na upravljanju kvalitetom u turizmu i hotelijerstvu, te prikazati rezultate istraživanja provedenog u hotelijerskim poduzećima Valamar Riviera d.d. i Maistra d.d., najvećim hotelskim grupacijama u Republici Hrvatskoj.
Abstract (english)
The quality management system is important for developing and maintaining the competitiveness of organizations, which international standards suggest ways to ensure at lower costs. The problem with the introduction of a quality system is limited resources, whether financial or human resources. Quality in tourism and hospitality includes consistent delivery of products and services to guests in accordance with expected standards. Providing quality service is one of the main challenges that caterers will face in the coming years, as it is a basic condition for success in the growing, fiercely competitive, global hospitality markets. The aim of this paper is to present the theoretical determinants of quality with an emphasis on quality management in tourism and hospitality, and to present the results of research conducted in the hotel companies Valamar Riviera d.d. and Maistra d.d., the largest hotel groups in the Republic of Croatia.
