Sažetak | U radu se razmatra pitanje prehrane i kulture blagovanja na podruĉju Europe s kratkim osvrtom na Istru u razdoblju ranoga novoga vijeka. Kako bi se dobio uvid u promjene nastale u ranome novom vijeku, neizbjeţno je u tom smislu bilo upiznati i kulturu prehrane u srednjemu vijeku. Nadalje, kroz rad su prikazani obiĉaji, navike i ponašanja te pogled na hranu i s drugih aspekata odnosno društvenih, kulturnih te religioznih. Osim simbola kruha i mesa koji su posebice obiljeţili razdoblje srednjega vijeka, u radu su iznesene i opisane razne zanimljivosti poput uporabe posuĊa i pribora za jelo, opremanja i postavljanja stola, prvih tiskanih kuharica, otvaranja prvih restorana, uloge muškaraca i ţena prilikom pripreme hrane, izrade slastica te neizostavne satiriĉna priĉa o idiličnoj zemlji Dembeliji. Otkrićem Novoga svijeta došlo je do znaĉajnih promjena za Europu i njezino stanovništvo odnosno bilo je to otkriće novoga puta prema budućnosti prehrane. Kulturu prehrane na istarskom podruĉju pokušala sam prikazati kroz nekoliko izvora. U prvome redu to su statuti. Podrobnije su pregledani i analizirani onaj Pulski, Dvigradski, Buzetski, Novigradski te Vodnjanski. Kao potvrda dugotrajne opstojnosti srednjovjekovnih prehrambenih namirnica, posluţio je Katastar Franje I. (1818. – 1840.). Iz izvora i dostupne literature vidljivo je da se istarski prostor jednim dijelom uklapa, ali i ne uklapa u širi mediteranski odnosno europski kontekst kada je rijeĉ o konzumaciji hrane te statusu pojedinih namirnica. |
Sažetak (engleski) | This paper deals with the issue of food and dining culture in Europe with a brief look at Istria in the early modern age. In order to gain insight into the changes that took place in the early modern age, it was inevitable to learn about the dietary culture in the Middle Ages. Furthermore, the paper shows customs, habits and behaviors, as well as views on food from other aspects such as social, cultural and religious. In addition to symbols of bread and meat, which particularly marked the Middle Ages, the paper presents and describes various interesting things, such as the use of crockery and cutlery, furnishing and setting tables, first printed cookbooks, opening the first restaurants, the role of men and women in preparing food, making desserts and the indispensable satirical story of the idyllic land of Cockaigne. With the discovery of the New World, significant changes have taken place for Europe and its inhabitants, that is, this was the discovery of a new path to the future of diet. I have tried to present the dietary culture of the Istrian area through several sources. Foremost, through statutes. The Pula, Dvigrad, Buzet, Novigrad and Vodnjan statutes were reviewed and analyzed in more detail. The cadaster of Francis I (1818 – 1840) served as a confirmation of the long-term viability of medieval foodstuffs. It can be seen from the sources and available literature that the Istrian area partly, but not completely, fits in the wider Mediterranean i.e. European context when it comes to food consumption and the status of certain foods. |
